Coconut peanut butter bliss balls

One of the first inspirations behind the Chia Bar was something popularly known as "bliss balls". Bills balls are small snacks made of (most often) a combination of dates, nuts and different flavorings like coconut or cacao.

I´ve always been super weak for coconut, and with the World Coconut Day (haha!) coming up in a few days I though it was a good excuse to make something delicious to celebrate - any excuse for something tasty, am I right?;) 

As always I like to sneak some extra nutrition into foods I make, so of course these contains a little superfoods from Chia seeds as well!

What you need

  • About 5 large medjool dates, apx 100 ml dates
  • 100 ml cashews of almonds (I prefer cashews)
  • 50 ml raisins
  • 1 TBSP peanut butter
  • 1 TBSP chia seeds
  • A pinch of salt (I use Pink Himalayan Salt)
  • Sprinkle of vanilla powder
  • A squeeze of lemon, I used almost all the juice of 1/2 lemon
  • As topping: coconut shavings to roll the balls in

How to make it

This recipe is so simple! All you do is pit the dates and then place all ingredients (except the coconut for topping) in a cutting machine; either a hand mixer with blades like I use, or a kitchen machine.

The mixture is done when it is sticky enough to roll into small balls. I would start with a little lemon juice, then taste and add more if you feel like it. Once you´re happy with the tast you can start rolling it up! I got 16 small balls with this recipe. Put some coconut shavings in a bowl and roll all the bliss balls into the coconut until they are completely covered, and viola, you´re done :)

Store in the fridge for up to 5 days (if you can keep them that long..).
